Research Area
Dr. Chilton’s research examines the association between genetic /epigenetic variations in the human genome and the metabolism key nutrients in the modern Western diet, and how these interactions impact human health. 

Brief Summary of Research
Specifically, Dr. Chilton’s laboratory addresses the role of gene-diet interactions as it relates to polyunsaturated fatty acid (PUFA) metabolism in driving inflammation, racial/ethnic health disparities and inflammatory disorders (including cardiovascular disease and cancer) as well as psychiatric/developmental disorders (ADHD, autism spectrum disorder and depression). The work also how examines specific human diet and nutrition strategies that can be implemented to address health disparities and lower the risk of human disease.
