Chicken Gumbo


Chicken GumboIngredients

  • 1 tbsp. Smart Balance spread
  • ¼ cup medium red onion, diced
  • ¼ cup green bell pepper, diced
  • 1/8 cup Andouille sausage, diced medium
  • 1 tsp. Spice Delight All Purpose Essence
  • 1 tsp. whole dry thyme
  • 2 tbsp. All-purpose flour
  • 1 pint low sodium chicken stock
  • 2 cups medium diced boneless, skinless chicken breast, cooked


  1. In a large stock pot over medium high heat add the first 7 ingredients listed above and sauté for 5 minutes.
  2. Add stock, chicken and simmer for 20 minutes. 
  3. Serve over rice.
