Loaded Sweet Potato Fries


  • 20 oz bag of frozen sweet potato fries
  • 8 oz black beans (1/2 can), drained
  • Guacamole
    • 1 avocado, mashed
    • Juice of 1 lime
    • Sea salt to taste
  • 2 Roma tomatoes, chopped
  • 4 green onions, chopped
  • 1/3 cup cilantro, chopped
  • 1/3 cup shredded cheese


  1. Arrange sweet potatoes on baking sheet and cook according to package.
  2. Sprinkle with cheese and black beans, then broil for 2 minutes until cheese melts.
  3. Top with tomatoes, onions, guacamole, and cilantro.
