Potato Egg Scramble

Potato Egg ScrambleIngredients

1 potato 
1 small onion, chopped 
½ cup chopped fresh spinach 
4 eggs, beaten 
2 tomatoes 
Salt and pepper to taste 
¼ cup shredded cheese 


  1. Bring a small pot of water to a boil. Add the potato and cook until tender but still firm, about 12-15 minutes. Drain, cool, and chop.  
  2. Add a small amount of oil to a skillet and heat to medium high. Add the onions, and cook until soft. Add spinach and cook until wilted, about 2 minutes.
  3. Reduce heat to medium and pour in the eggs. Stir in the potatoes and tomatoes, and season with salt and pepper. Cook, stirring occasionally, until eggs have set. 
  4. Sprinkle with cheese. Enjoy!
