Pumpkin Spice Overnight Oats


  • 1/3 cup old fashioned oats
  • 1/3 cup pumpkin puree
  • 1/3 almond milk
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tsp maple syrup
  • ½ banana sliced
  • ¼ cup chopped pecans


  1. Layer all ingredients except bananas and pecans into a mason jar.
  2. Stir well, cover, and refrigerate for 5 hours or overnight.
  3. Take out of the refrigerator and stir again, then sprinkle banana and pecan pieces on top just before serving.

Serving size is 1.
