- 2 tbs. red wine vinegar
- 1 orange, zest removed
- 2 ½ tbs. fresh orange juice
- 2 tsps. grated fresh ginger
- ½ cup golden or dark raisins
- 6 apples, preferably use 2 to 3 different kinds, cored and sliced
- 2/3 cup walnuts, toasted and coarsely chopped
- 2 tbs. extra-virgin olive oil
- In a large bowl whisk together vinegar, orange zest, orange juice, ginger and raisins.
- Add fruit and walnuts to bowl and drizzle with olive oil. Toss well to combine.
- Refrigerate 1 hour before serving.
