Apple-Walnut Salad with Ginger Orange DressingIngredients

  • 2 tbs. red wine vinegar
  • 1 orange, zest removed
  • 2 ½  tbs. fresh orange juice
  • 2 tsps. grated fresh ginger
  • ½ cup golden or dark raisins 
  • 6 apples, preferably use 2 to 3 different kinds, cored and sliced
  • 2/3 cup walnuts, toasted and coarsely chopped
  • 2 tbs. extra-virgin olive oil

Instructions

  1. In a large bowl whisk together vinegar, orange zest, orange juice, ginger and raisins. 
  2. Add fruit and walnuts to bowl and drizzle with olive oil. Toss well to combine. 
  3. Refrigerate 1 hour before serving.
