Arugula and Heirloom Tomato Salad


Arugula and Heirloom Tomato SaladIngredients

  • 1 large bunch arugula
  • 2 heirloom tomatoes, cut into wedges
  • 1 large cucumber, sliced into very thin rounds
  • 1 small red onion, sliced into very thin rings (optional)
  • ¾ cups (6 oz.) crumbled feta cheese
  • 1 cup slivered almonds
  • Vinaigrette salad dressing
  • Salt and freshly ground black pepper, to taste


In a large bowl toss arugula, tomato, cucumber, onion slices and feta cheese.  Drizzle with dressing; season with salt and pepper.  Top with slivered almonds before serving.
