Chicken Curry with Rice


Chicken Curry with RiceIngredients

  • 1 tbsp. Smart Balance spread
  • ¼ cup Medium Onion, Diced
  • ¼ cup Green Bell Pepper, Diced
  • ¼ cup Carrots, Diced
  • 2 tsp. Curry Powder
  • 2 tsp. Spice Delight All Purpose Essence
  • 1 quart Low Sodium Chicken Stock
  • 1 cup Basmati Rice (uncooked)
  • 1 cup Medium Diced Chicken, cooked


  1. In a large stock pot over medium heat, add the first 6 ingredients.
  2. Cook for 5-7 minutes and stir occasionally.
  3. Add stock, rice and chicken.  Simmer for 30 minutes until rice is tender.
