- 1 tbsp. Smart Balance spread
- ¼ cup Medium Onion, Diced
- ¼ cup Green Bell Pepper, Diced
- ¼ cup Carrots, Diced
- 2 tsp. Curry Powder
- 2 tsp. Spice Delight All Purpose Essence
- 1 quart Low Sodium Chicken Stock
- 1 cup Basmati Rice (uncooked)
- 1 cup Medium Diced Chicken, cooked
- In a large stock pot over medium heat, add the first 6 ingredients.
- Cook for 5-7 minutes and stir occasionally.
- Add stock, rice and chicken. Simmer for 30 minutes until rice is tender.
